Sweetcorn and Chicken Paprikash
Ingredients:
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into small cubes
- 1/2 teaspoon paprika
- 1/2 cup sweetcorn
- 1/2 cup chicken broth
- 1 egg
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the paprika and sweetcorn and cook for another 2 minutes.
4. Pour in the chicken broth and bring to a simmer.
5. Crack the egg into the skillet and stir to combine.
6. Cook until the egg is cooked through and the sauce has thickened, about 5 minutes.
7. Season with salt and pepper to taste.
8. Serve hot. Enjoy!
