Teriyaki Chicken and Eggplant Stir Fry
Ingredients:
-1 lb boneless, skinless chicken breasts, cut into cubes
-1 large eggplant, cut into cubes
-1 package extra-firm tofu, cut into cubes
-1 package cheese tortellini
-2 carrots, peeled and sliced
-1/4 cup teriyaki sauce
-1 tablespoon olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook for 5 minutes, stirring occasionally.
3. Add the eggplant cubes and cook for 3 minutes, stirring occasionally.
4. Add the tofu cubes and cook for 2 minutes, stirring occasionally.
5. Add the carrots and cook for 3 minutes, stirring occasionally.
6. Add the tortellini and cook for 2 minutes, stirring occasionally.
7. Pour the teriyaki sauce over the stir fry and cook for 2 minutes, stirring occasionally.
8. Serve hot. Enjoy!
