Teriyaki Chicken Fried Rice

Ingredients:

- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 carrot, diced
- 2 cups cooked white rice
- 1 cup cooked chicken, diced
- 1 tomato, diced
- 2 tablespoons soy sauce
- 2 green onions, chopped
- 1 egg, lightly beaten

Instructions:

1. Heat oil in a large skillet over medium heat.

2. Add garlic and onion and cook until softened, about 5 minutes.

3. Add carrot and cook for an additional 3 minutes.

4. Add cooked rice and stir to combine.

5. Add chicken, tomato, soy sauce, and green onions and stir to combine.

6. Push the rice mixture to the side of the skillet and pour the beaten egg into the empty space.

7. Scramble the egg until cooked through, about 2 minutes.

8. Stir the egg into the rice mixture and cook for an additional 2 minutes.

9. Serve warm. Enjoy!
