Teriyaki Chicken Rice Bowl
Ingredients:
- 2 cups cooked white rice
- 1 lb boneless, skinless chicken thighs
- 2 tablespoons teriyaki sauce
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeno pepper, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Place chicken thighs in a baking dish. Drizzle with teriyaki sauce and season with salt and pepper. Bake for 25 minutes, or until chicken is cooked through.
3. Heat olive oil in a large skillet over medium-high heat. Add bell peppers, jalapeno pepper, and garlic. Cook for 5 minutes, stirring occasionally.
4. Add cooked chicken to the skillet and cook for an additional 5 minutes.
5. Serve chicken and vegetables over cooked white rice. Enjoy!
