Teriyaki Salmon with Bacon and Red Beans
Ingredients:
- 2 salmon fillets
- 4 strips of bacon, diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of grated ginger
- 2 tablespoons of chopped coriander
- 2 eggs, beaten
- 1 can of red beans, drained and rinsed
- 2 tablespoons of soy sauce
Instructions:
1. Preheat oven to 350°F.
2. Place salmon fillets in a greased baking dish.
3. In a large skillet, cook bacon over medium heat until crispy. Remove bacon from skillet and set aside.
4. In the same skillet, add onion, garlic, ginger, and coriander. Cook until onion is softened, about 5 minutes.
5. Add red beans and cook for an additional 2 minutes.
6. Pour beaten eggs over the vegetables and stir to combine. Cook until eggs are just set, about 2 minutes.
7. Add soy sauce and stir to combine.
8. Pour the egg and vegetable mixture over the salmon fillets. Top with bacon.
9. Bake in preheated oven for 15-20 minutes, or until salmon is cooked through.
10. Serve with steamed rice and enjoy!
