Make Teriyaki Salmon with Rice Noodles
Teriyaki Salmon with Rice Noodles
Ingredients:
-2 salmon fillets
-2 tablespoons butter
-2 tablespoons cream
-2 tablespoons soy sauce
-1 onion, diced
-1 carrot, diced
-1/4 cup parmesan, grated
-1 teaspoon sriracha
-1 lime, juiced
-2 tablespoons capers
-2 tablespoons cilantro, chopped
-2 tablespoons parsley, chopped
-1 cup cooked rice
-1/2 cup cooked rice noodles
-1 avocado, diced
-2 cloves garlic, minced
-2 tablespoons balsamic leaves
-1 tablespoon honey
-1 lemon, juiced
-1/2 cup cherry tomatoes, halved
-1 tablespoon tomato paste
-1 tablespoon miso paste
-1 tablespoon vinegar
-1/4 cup oat milk
-1 tablespoon ketchup
-2 tablespoons olive oil
-1 tablespoon sesame seed oil
-1/2 teaspoon pepper
Instructions:
1. Preheat oven to 375°F.
2. In a small bowl, mix together butter, cream, soy sauce, sriracha, lime juice, capers, cilantro, parsley, honey, lemon juice, tomato paste, miso paste, vinegar, oat milk, ketchup, olive oil, sesame seed oil, and pepper.
3. Place salmon fillets in a baking dish and pour the sauce over them. Top with onion, carrot, parmesan, and balsamic leaves.
4. Bake in preheated oven for 20 minutes.
5. Meanwhile, cook rice and rice noodles according to package instructions.
6. When salmon is done, top with avocado, garlic, cherry tomatoes, and cooked rice and noodles.
7. Serve and enjoy!
