Teriyaki Tofu and Vegetable Rice Bowl
Ingredients:
- 2 cups cooked rice
- 1 block of firm tofu, cut into cubes
- 1/2 cup teriyaki sauce
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced mushrooms
- 1/2 cup diced bamboo shoots
- 1/2 cup diced fried tofu
- 1/2 cup diced eggplant
Instructions:
1. Heat a large skillet over medium-high heat and add the tofu cubes.
2. Cook the tofu for about 5 minutes, stirring occasionally, until golden brown.
3. Add the teriyaki sauce and stir to coat the tofu.
4. Reduce the heat to medium and add the carrots, celery, mushrooms, bamboo shoots, and fried tofu.
5. Cook for about 5 minutes, stirring occasionally, until the vegetables are tender.
6. Add the eggplant and cook for an additional 2 minutes.
7. Serve the teriyaki tofu and vegetables over the cooked rice. Enjoy!
