Make Teriyaki Tofu and Zucchini

Teriyaki Tofu and Zucchini


- 1 block of extra firm tofu
- 2 medium zucchini, sliced
- 2 cloves of garlic, minced
- 1 teaspoon of freshly grated ginger
- 2 tablespoons of freshly chopped coriander
- 2 tablespoons of lemon juice
- 2 tablespoons of olive oil
- Salt and pepper to taste


1. Preheat oven to 375 degrees F.

2. Drain the tofu and pat it dry with a paper towel. Cut the tofu into cubes and place them on a baking sheet lined with parchment paper.

3. In a small bowl, mix together the garlic, ginger, coriander, lemon juice, olive oil, salt, and pepper.

4. Pour the mixture over the tofu cubes and toss to coat.

5. Bake the tofu for 20 minutes, flipping the cubes halfway through.

6. While the tofu is baking, heat a large skillet over medium heat. Add the zucchini slices and cook for 5-7 minutes, stirring occasionally.

7. Once the tofu is done baking, add it to the skillet with the zucchini and stir to combine.

8. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.

9. Serve the teriyaki tofu and zucchini with your favorite side dish. Enjoy!
