Tex-Mex Stuffed Peppers

Ingredients:

-4 yellow peppers
-1/2 cup cooked brown beans
-1/2 cup cooked white rice
-1/2 cup cooked diced beef
-1/2 cup diced tomato
-1/2 cup diced onion
-1/2 cup diced potato
-2 cloves garlic, minced
-1/2 cup chicken broth
-1/2 cup corn
-1/4 cup sliced almonds
-1/4 cup grated parmesan cheese
-1/4 cup mayonnaise
-1/4 cup chopped fresh basil
-1/2 teaspoon paprika
-Salt and pepper to taste
-2 tablespoons sriracha sauce

Instructions:

1. Preheat oven to 375°F.

2. Cut the tops off of the yellow peppers and remove the seeds and membranes. Place the peppers in a baking dish.

3. In a large bowl, combine the cooked brown beans, cooked white rice, cooked diced beef, diced tomato, diced onion, diced potato, minced garlic, chicken broth, corn, almonds, parmesan cheese, mayonnaise, basil, paprika, salt, pepper, and sriracha sauce. Mix until all ingredients are well combined.

4. Stuff the peppers with the mixture and place the tops back on the peppers.

5. Bake in the preheated oven for 30 minutes.

6. While the peppers are baking, prepare the topping. In a medium bowl, mash together the avocado, sour cream, and a pinch of salt and pepper.

7. Remove the peppers from the oven and top with the avocado mixture.

8. Serve with warm corn tortillas. Enjoy!
