Thai Coconut Curry Chicken

Ingredients:

- 2 chicken breasts, cut into 1-inch cubes
- 2 tablespoons yellow curry paste
- 1 can coconut cream
- 2 tablespoons corn starch
- 2 tablespoons palm sugar
- 2 cups cooked white rice

Instructions:

1. Heat a large skillet over medium-high heat. Add the chicken cubes and cook for 5 minutes, stirring occasionally, until lightly browned.

2. Add the curry paste and stir to coat the chicken. Cook for 1 minute.

3. Pour in the coconut cream and stir to combine. Bring to a simmer and cook for 5 minutes.

4. In a small bowl, whisk together the corn starch and palm sugar. Slowly add the mixture to the skillet, stirring constantly. Simmer for 2 minutes until the sauce thickens.

5. Serve the coconut curry chicken over cooked white rice. Enjoy!
