Thai Coconut Noodle Bowl
Ingredients:
-1 package extra firm tofu
-1 package rice noodles
-2 tablespoons dark soy sauce
-1 zucchini, diced
-1 carrot, diced
-1 cup cooked rice
-1/2 package spaghetti noodles
-1/2 cup mushrooms, sliced
-1 can coconut milk
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the tofu on a baking sheet and bake for 20 minutes, flipping halfway through.
3. Meanwhile, cook the rice noodles according to package instructions.
4. In a large skillet, heat the dark soy sauce over medium heat.
5. Add the zucchini, carrot, and mushrooms and cook until vegetables are tender, about 5 minutes.
6. Add the cooked rice noodles, cooked rice, and spaghetti noodles to the skillet and stir to combine.
7. Pour in the coconut milk and stir to combine.
8. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
9. Serve the noodle bowl topped with the baked tofu. Enjoy!
