Make Thai Coconut Pork Gnocchi

Thai Coconut Pork Gnocchi


-1 package of gnocchi
-1 lb of ground pork
-1 can of coconut milk
-1 red bell pepper, diced
-1 onion, diced
-2 cloves of garlic, minced
-1 teaspoon of curry powder
-1 teaspoon of cumin
-1 teaspoon of coriander
-1 teaspoon of turmeric
-1 teaspoon of salt
-1/2 teaspoon of black pepper
-1/4 cup of chopped fresh cilantro
-1/4 cup of chopped fresh basil
-1/4 cup of chopped fresh mint
-1/4 cup of chopped fresh parsley
-1/4 cup of chopped roasted peanuts
-1/4 cup of chopped scallions
-1/4 cup of chopped fresh lime juice


1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions. Drain and set aside.

2. In a large skillet over medium heat, cook the ground pork until it is no longer pink.

3. Add the bell pepper, onion, garlic, curry powder, cumin, coriander, turmeric, salt, and pepper. Cook for 5 minutes, stirring occasionally.

4. Add the coconut milk and bring to a simmer. Simmer for 5 minutes.

5. Add the cooked gnocchi and stir to combine. Simmer for an additional 5 minutes.

6. Remove from heat and stir in the cilantro, basil, mint, parsley, peanuts, scallions, and lime juice.

7. Serve with a side salad. Enjoy!
