Ingredients:
- 4 eggs
- 2 tomatoes, diced
- 1/2 cup cheese, shredded
- 2 tbsp Thai curry paste
- 2 tbsp pesto
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a small bowl, mix together the Thai curry paste and pesto.
3. Divide the mixture evenly into four ramekins or small baking dishes.
4. Crack an egg into each ramekin over the curry pesto mixture.
5. Top each egg with diced tomatoes and shredded cheese.
6. Place the ramekins on a baking sheet and bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still runny.
