Thai Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 cups cooked chicken, diced
- 2 eggs
- 1 onion, diced
- 1 shallot, diced
- 1 chili, diced
- 1 tomato, diced
- 1/2 teaspoon black pepper

Instructions:

1. Heat a large skillet over medium-high heat.

2. Add the onion, shallot, chili, and tomato to the skillet and cook until the vegetables are softened, about 5 minutes.

3. Push the vegetables to the side of the skillet and add the eggs. Scramble the eggs until cooked through.

4. Add the cooked rice and chicken to the skillet and stir to combine.

5. Season with black pepper and stir to combine.

6. Cook for an additional 5 minutes, stirring occasionally, until the rice is heated through.

7. Serve hot. Enjoy!
