Recipe Name: Thai Green Curry with Tofu

Ingredients:
- 6 lime leaves
- 1 bunch of coriander
- 2 stalks of lemongrass
- 1 block of tofu, cubed
- 1 thumb-sized piece of ginger, minced
- 4 cloves of garlic, minced
- 1 tsp of turmeric
- Juice of 1 lemon
- Juice of 1 lime
- Handful of Thai basil leaves
- 1 can of coconut milk
- 2 tomatoes, diced
- 2 green chillies, sliced
- 1 courgette, sliced
- 1 aubergine, diced

Instructions:
1. In a blender, combine the lime leaves, coriander, lemongrass, ginger, garlic, turmeric, lemon juice, lime juice, and Thai basil leaves. Blend until a smooth paste forms.
2. In a large pot, heat some oil over medium heat. Add the curry paste and cook for 2-3 minutes until fragrant.
3. Add the diced tomatoes, sliced green chillies, courgette, and aubergine to the pot. Stir to coat the vegetables in the curry paste.
4. Pour in the coconut milk and bring the curry to a simmer. Let it cook for about 15-20 minutes until the vegetables are tender.
5. Add the cubed tofu to the curry and let it heat through for a few minutes.
6. Taste and adjust the seasoning with salt or more lime juice if needed.
7. Serve the Thai green curry with tofu hot over steamed rice or noodles. Enjoy!
