Thai Green Papaya Salad with Chicken and Shrimp
Ingredients:
- 2 cups cooked white rice
- 2 cups shredded cooked chicken
- 1 large green papaya, peeled, seeded, and julienned
- 1/2 cup cooked shrimp, peeled and deveined
- 1/4 cup chopped fresh cilantro
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons sugar
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped roasted peanuts
Instructions:
1. In a large bowl, combine the cooked rice, chicken, green papaya, shrimp, and cilantro.
2. In a small bowl, whisk together the fish sauce, lime juice, sugar, garlic, and red pepper flakes.
3. Pour the dressing over the salad and toss to combine.
4. Sprinkle with the chopped peanuts and serve.
