Recipe: Thai-Inspired Poutine (Vegetarian)
Ingredients:
- 4 large potatoes, washed and cut into fries
- 1 cup coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 cup shredded mozzarella cheese
- Fresh cilantro, chopped (for garnish)
- Crushed peanuts (for garnish)
Instructions:
1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss the potato fries with vegetable oil until evenly coated. Spread them out on the prepared baking sheet in a single layer and bake for about 30-35 minutes, or until crispy and golden brown.
3. In a small saucepan, combine the coconut milk, red curry paste, soy sauce, and brown sugar. Cook over medium heat, stirring occasionally, until the mixture thickens slightly, about 5-7 minutes.
4. Once the fries are done, remove them from the oven and transfer to a serving dish. Sprinkle the shredded mozzarella cheese over the hot fries.
5. Drizzle the Thai curry sauce over the cheese-covered fries.
6. Garnish with chopped cilantro and crushed peanuts.
