Thai Peanut Coconut Rice
Ingredients:
- 2 cups of cooked rice
- 1 can of cream of mushroom soup
- 2 tablespoons of all-purpose flour
- 1 can of coconut milk
- 2 tablespoons of tomato paste
- 2 tablespoons of creamy peanut butter
- 1 cup of frozen peas
- 1 small onion, diced
- 1/4 cup of sour cream
- 2 tablespoons of cocoa powder
- 2 tablespoons of sugar
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine cooked rice, cream of mushroom soup, flour, coconut milk, tomato paste, peanut butter, peas, onions, sour cream, cocoa powder, and sugar. Stir until all ingredients are combined.
3. Pour mixture into a greased 9x13 inch baking dish.
4. Bake in preheated oven for 30 minutes, or until heated through.
5. Serve warm and enjoy!
