Thomas' Egg and Veggie Frittata
Ingredients:
- 4 eggs
- 1/2 cup grated cheese
- 1/2 cup grated carrots
- 1/2 cup diced cucumber
- 2 tablespoons chopped chives
- 1 Thomas English Muffin, split and toasted
Instructions:
1. Preheat oven to 375 degrees F.
2. In a medium bowl, whisk together eggs, grated cheese, carrots, cucumber, and chives.
3. Grease a 9-inch pie plate with cooking spray.
4. Place the toasted Thomas English Muffin halves in the bottom of the pie plate.
5. Pour egg mixture over the muffin halves.
6. Bake for 25-30 minutes, or until the center is set and the top is golden brown.
7. Let cool for 5 minutes before slicing and serving. Enjoy!
