Tilapia with Tomato-Onion Rice

Ingredients:

- 2 tilapia fillets
- 1 green pepper, diced
- 1 onion, diced
- 2 tomatoes, diced
- 1 cup of cooked rice
- 2 tablespoons of olive oil
- 1 teaspoon of oregano
- Salt and pepper to taste
- 1/2 cup of cooked pasta

Instructions:

1. Preheat oven to 350°F.

2. Heat the olive oil in a large skillet over medium heat. Add the onion and green pepper and cook until softened, about 5 minutes.

3. Add the tomatoes and cook for an additional 3 minutes.

4. Add the cooked rice, oregano, salt, and pepper. Stir to combine and cook for an additional 5 minutes.

5. Place the tilapia fillets in a greased baking dish. Top with the tomato-onion mixture.

6. Bake for 15 minutes or until the fish is cooked through.

7. Serve the tilapia with the tomato-onion rice and cooked pasta. Enjoy!
