Tilapia with Veggies and Quinoa
Ingredients:
- 2 tilapia fillets
- 1 green bell pepper, chopped
- 1 yellow onion, chopped
- 1 zucchini, chopped
- 2 tomatoes, chopped
- 2 tablespoons liquid aminos
- 1 teaspoon freshly grated ginger
- 2 cloves garlic, minced
- 1 cup quinoa
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine bell pepper, onion, zucchini, tomatoes, liquid aminos, ginger, and garlic. Mix until all ingredients are evenly distributed.
3. Place tilapia fillets in a baking dish. Top with vegetable mixture.
4. Bake for 20 minutes, or until fish is cooked through.
5. Meanwhile, cook quinoa according to package instructions.
6. Serve tilapia with vegetables and quinoa. Enjoy!
