Tofu and Apple Fajitas

Ingredients:

-1 block of extra-firm tofu, drained and cubed
-2 apples, cored and sliced
-1 onion, diced
-1 avocado, diced
-2 tablespoons of honey
-1 teaspoon of ground ginger
-1 teaspoon of cumin
-1 teaspoon of salt
-2 tablespoons of sesame sauce
-1 teaspoon of pepper
-2 tablespoons of olive oil
-1 cup of cooked white rice
-1 orange, peeled and sliced
-1 cucumber, diced
-1 cup of fresh spinach
-1/4 cup of cilantro dressing
-1/4 cup of fresh cilantro, chopped
-2 plantains, sliced
-1 French baguette bread, sliced
-1/4 cup of pickles
-1/4 cup of muenster cheese, shredded

Instructions:

1. Heat a large frying pan over medium-high heat and add the olive oil.

2. Add the tofu cubes and cook for 5 minutes, stirring occasionally.

3. Add the apples, onions, and avocado and cook for an additional 5 minutes.

4. Add the honey, ground ginger, cumin, salt, sesame sauce, and pepper and stir to combine.

5. Add the cooked white rice and orange slices and cook for an additional 5 minutes.

6. Add the cucumber, spinach, cilantro dressing, and cilantro and cook for an additional 5 minutes.

7. Add the plantains and French baguette bread and cook for an additional 5 minutes.

8. Add the pickles and muenster cheese and cook for an additional 5 minutes.

9. Serve the fajitas with the remaining ingredients and enjoy!
