Tofu and Barley Bowl with Broccoli and Spinach

Ingredients:

- 1 cup barley
- 1 block of firm tofu
- 1 cup cherry tomatoes, halved
- 2 cups broccoli florets
- 2 cups spinach
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions:

1. Cook the barley according to package instructions.

2. While the barley is cooking, heat the olive oil in a large skillet over medium heat.

3. Add the garlic and cook for 1 minute.

4. Add the tofu and cook until golden brown, about 5 minutes.

5. Add the cherry tomatoes, broccoli, spinach, oregano, salt, and pepper. Cook for 5 minutes, stirring occasionally.

6. When the barley is finished cooking, divide it between two bowls.

7. Top the barley with the tofu and vegetable mixture.

8. Serve and enjoy!
