Tofu and Beef Marinara with Kale and Spinach
Ingredients:
-1 lb ground beef
-1/2 cup diced shallots
-2 cloves garlic, minced
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1/2 cup marinara sauce
-1/2 cup cooked rice
-1/2 cup cooked pasta
-1/2 cup cubed tofu
-2 cups chopped kale
-2 cups chopped spinach
-2 eggs, lightly beaten
Instructions:
1. Heat a large skillet over medium-high heat. Add the ground beef and shallots and cook until the beef is browned and the shallots are softened, about 5 minutes.
2. Add the garlic, salt, and pepper and cook for another minute.
3. Add the marinara sauce, rice, pasta, tofu, kale, and spinach and stir to combine.
4. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
5. Add the eggs and stir to combine. Cook for another 5 minutes, stirring occasionally.
6. Serve hot. Enjoy!
