Make Tofu and Chickpea Stir-Fry
Recipe: Tofu and Chickpea Stir-Fry
Ingredients:
- 1 block of firm tofu, cubed
- 1 can of chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of hoisin sauce
- 1 teaspoon of sesame oil
- 1 teaspoon of cornstarch
- Salt and pepper to taste
- Cooking oil
Instructions:
1. In a small bowl, mix together soy sauce, hoisin sauce, sesame oil, and cornstarch. Set aside.
2. Heat some cooking oil in a large pan or wok over medium-high heat.
3. Add the cubed tofu to the pan and cook until golden brown on all sides. Remove from the pan and set aside.
4. In the same pan, add a little more oil if needed and sauté the onion, garlic, and bell peppers until they start to soften.
5. Add the drained chickpeas to the pan and stir-fry for a few minutes.
6. Return the tofu to the pan and pour the sauce mixture over the tofu and vegetables. Stir well to coat everything evenly.
7. Cook for another 2-3 minutes until the sauce thickens slightly and everything is heated through.
8. Season with salt and pepper to taste.
9. Serve the tofu and chickpea stir-fry hot over steamed rice or noodles.
