Make Tofu and Chickpea Stir-Fry with Rice

Recipe Name: Tofu and Chickpea Stir-Fry with Rice

Ingredients:
- 1 block of firm tofu, cubed
- 1 can of chickpeas, drained and rinsed
- 1 cup of cooked rice
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 2 tablespoons of vegetable oil
- Salt and pepper to taste
- Optional toppings: sliced green onions, sesame seeds

Instructions:
1. In a large skillet or wok, heat the vegetable oil over medium heat.
2. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
3. In the same skillet, add the sliced onion and red bell pepper. Cook for 3-4 minutes until the vegetables are slightly softened.
4. Add the drained chickpeas to the skillet and cook for another 2-3 minutes.
5. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, minced garlic, and grated ginger.
6. Pour the sauce over the tofu and vegetables in the skillet. Stir to combine and let it simmer for 2-3 minutes.
7. Add the cooked rice to the skillet and mix well to combine all the ingredients.
8. Season with salt and pepper to taste.
9. Serve the tofu and chickpea stir-fry over rice, garnished with sliced green onions and sesame seeds if desired.
