Tofu and Mushroom Tomato Spinach Bowl
Ingredients:
-1 package of extra-firm tofu
-2 tablespoons of mushroom seasoning
-2 tablespoons of olive oil
-1 can of diced tomatoes
-2 cups of fresh spinach
-1/2 cup of oatmilk
Instructions:
1. Preheat oven to 375°F.
2. Drain and press the tofu to remove excess water. Cut the tofu into cubes and place in a bowl.
3. Add the mushroom seasoning and olive oil to the bowl and mix until the tofu cubes are evenly coated.
4. Spread the tofu cubes onto a baking sheet and bake for 25 minutes, flipping halfway through.
5. In a large skillet, heat the diced tomatoes over medium heat.
6. Once the tomatoes are hot, add the spinach and oatmilk. Stir until the spinach is wilted.
7. Add the baked tofu cubes to the skillet and stir until everything is combined.
8. Serve warm and enjoy!
