Tofu and Pickle Frittata
Ingredients:
- 2 tablespoons of olive oil
- 1/2 cup of diced onions
- 1/2 cup of diced pickles
- 1/2 cup of crumbled blue cheese
- 1/2 cup of crumbled tofu
- 4 eggs
- 2 tablespoons of honey
- 1/4 cup of shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350°F.
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add onions and pickles and cook until softened, about 5 minutes.
4. Add blue cheese, tofu, and honey and cook for an additional 2 minutes.
5. In a medium bowl, whisk together eggs, salt, and pepper.
6. Pour egg mixture into the skillet and stir to combine.
7. Sprinkle shredded cheese over the top and transfer to the oven.
8. Bake for 15-20 minutes or until the eggs are set and the cheese is melted and golden.
9. Serve with hummus, strawberry yogurt, and a cup of coffee. Enjoy!
