Tofu Arroz con Huevo
Ingredients:
- 2 cups cooked arroz
- 1/2 cup diced tofu
- 1/2 cup salsa de tomate
- 2 eggs
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced tofu and cook until lightly browned, about 5 minutes.
3. Add the cooked arroz, salsa de tomate, salt, and pepper and stir to combine.
4. Reduce the heat to low and cook for 5 minutes, stirring occasionally.
5. Push the arroz mixture to one side of the skillet and crack the eggs into the other side.
6. Cook the eggs until they are cooked through, about 3 minutes.
7. Gently stir the eggs into the arroz mixture and cook for an additional 2 minutes.
8. Serve the arroz con huevo warm. Enjoy!
