Tofu Red Bean Rice Bowl
Ingredients:
-1 block extra firm tofu
-1 can red beans, drained and rinsed
-1 cup cooked white or brown rice
-1 cup tomato sauce
Instructions:
1. Preheat oven to 400 degrees F.
2. Cut the tofu into cubes and place on a baking sheet lined with parchment paper. Bake for 20 minutes, flipping halfway through.
3. Meanwhile, heat the red beans in a medium saucepan over medium heat.
4. Once the beans are hot, add the cooked rice and tomato sauce. Stir to combine and heat through.
5. To assemble the bowls, divide the tofu, red bean and rice mixture into four bowls.
6. Enjoy!
