Tofu Scramble with Carrots and Tomatoes

Ingredients:

- 2 eggs
- 2 carrots, diced
- 1/2 block of firm tofu, crumbled
- 2 tomatoes, diced
- 1 banana, sliced

Instructions:

1. Heat a large skillet over medium heat and add the eggs. Cook, stirring occasionally, until the eggs are scrambled and cooked through.

2. Add the diced carrots and cook for 2 minutes, stirring occasionally.

3. Add the crumbled tofu and cook for an additional 2 minutes, stirring occasionally.

4. Add the diced tomatoes and cook for an additional 2 minutes, stirring occasionally.

5. Add the sliced banana and cook for an additional 2 minutes, stirring occasionally.

6. Serve the scramble warm with your favorite toppings. Enjoy!
