Tofu Spinach Frittata

Ingredients:

-1 block of firm tofu
-2 cups of fresh spinach
-4 eggs
-1/2 cup of shredded cheese
-2 tablespoons of oil
-1 tomato, diced
-1 red pepper, diced
-Salt to taste

Instructions:

1. Preheat oven to 350°F.

2. In a large bowl, crumble the tofu and mix in the spinach, eggs, cheese, oil, tomato, red pepper, and salt.

3. Grease a 9-inch pie plate with oil and pour the tofu mixture into it.

4. Bake in the preheated oven for 30 minutes, or until the frittata is golden brown and cooked through.

5. Let cool for 10 minutes before slicing and serving. Enjoy!
