Tofu Spinach Frittata

Ingredients:

-1 block of firm tofu
-2 cups of spinach
-4 eggs
-1/2 cup of shredded cheese
-1 tablespoon of oil
-1 tomato, diced
-1 red pepper, diced
-Salt to taste

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat oil in a large oven-safe skillet over medium heat.

3. Add the diced red pepper and tomato and cook for 3-4 minutes, stirring occasionally.

4. Add the spinach and cook for an additional 2 minutes.

5. Crumble the tofu into the skillet and stir to combine.

6. In a separate bowl, whisk together the eggs and cheese.

7. Pour the egg mixture into the skillet and stir to combine.

8. Sprinkle with salt to taste.

9. Place the skillet in the preheated oven and bake for 20-25 minutes, or until the eggs are cooked through.

10. Serve warm. Enjoy!
