Make Tofu Stir-Fry with Vegetables and Rice
Recipe Name: Tofu Stir-Fry with Vegetables and Rice
Ingredients:
- 1 block of firm tofu, drained and cubed
- 2 carrots, sliced
- 1 cup of sliced mushrooms
- 1 cup of cooked rice
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- Salt and pepper to taste
- Optional: sliced green onions for garnish
Instructions:
1. Heat a large skillet or wok over medium-high heat. Add the sesame oil and swirl to coat the pan.
2. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
3. In the same skillet, add a bit more oil if needed and sauté the sliced carrots until they start to soften, about 3-4 minutes.
4. Add the sliced mushrooms to the skillet and cook until they release their juices and start to brown, about 5 minutes.
5. Push the vegetables to one side of the skillet and add the minced garlic and grated ginger to the empty side. Cook for about 30 seconds until fragrant, then mix everything together.
6. Add the cooked rice to the skillet and stir to combine with the vegetables.
7. Return the cooked tofu to the skillet and pour the soy sauce over everything. Stir well to coat everything evenly.
8. Season with salt and pepper to taste, and cook for another 2-3 minutes to heat everything through.
9. Serve the tofu stir-fry over rice, garnished with sliced green onions if desired.
