Tofu Tomato Anchovy Salad

Ingredients:

- 1 block of firm tofu, cubed
- 2 large tomatoes, diced
- 2 tablespoons of anchovies, chopped
- Juice of 1 lime
- 2 tablespoons of plain yoghurt
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 350°F.

2. Place the cubed tofu on a baking sheet and bake for 15 minutes, or until golden brown.

3. In a large bowl, combine the diced tomatoes, anchovies, lime juice, and yoghurt.

4. Add the cooked tofu to the bowl and mix until everything is combined.

5. Season with salt and pepper, to taste.

6. Serve chilled or at room temperature. Enjoy!
