Tom Yum Fried Rice

Ingredients:

-1 cup cooked rice
-1/2 cup kimchi
-1 teaspoon cumin
-1/2 cup cooked beans
-1/2 cup brussel sprouts, chopped
-1/2 cup cooked chicken, diced
-1/2 cup carrots, diced
-1 teaspoon salt
-2 tablespoons olive oil
-2 tablespoons flour
-2 tablespoons peanut butter
-1 apple, diced
-1 banana, diced
-2 tablespoons tom yum paste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the kimchi, cumin, beans, brussel sprouts, chicken, carrots, and salt. Cook for 5 minutes, stirring occasionally.

3. Add the cooked rice and stir to combine.

4. In a small bowl, mix together the flour, peanut butter, apple, banana, and tom yum paste.

5. Add the mixture to the skillet and stir to combine.

6. Cook for an additional 5 minutes, stirring occasionally.

7. Serve hot. Enjoy!
