Tomatillo and Banana Grilled Cheese
Ingredients:
- 4 tomatillos, husked and diced
- 2 tablespoons milk
- 2 anchovy fillets, minced
- 2 cups shredded cheddar cheese
- 2 tablespoons maple syrup
- 2 tablespoons white vinegar
- 1 banana, sliced
- 4 slices of bread
Instructions:
1. Preheat a large skillet over medium heat.
2. In a small bowl, combine the diced tomatillos, milk, anchovies, cheddar cheese, maple syrup, and vinegar. Mix until combined.
3. Spread the mixture onto two slices of bread. Top with the banana slices and the remaining two slices of bread.
4. Place the sandwiches in the preheated skillet and cook for 3-4 minutes per side, or until the cheese is melted and the bread is golden brown.
5. Serve warm and enjoy!
