Cheesy Onion and Pepper Pasta

Ingredients:

- 2 tablespoons olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups uncooked pasta
- 1 cup diced tomatoes
- 2 cups shredded cheese
- 2 eggs, lightly beaten
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and bell pepper and cook until softened, about 5 minutes.

3. Add the garlic and cook for another minute.

4. Add the pasta and tomatoes and cook until the pasta is al dente, about 10 minutes.

5. Add the cheese and eggs and stir until the cheese is melted and the eggs are cooked, about 5 minutes.

6. Season with salt and pepper to taste.

7. Serve hot. Enjoy!
