Make Tomato and Capsicum Rice

Tomato and Capsicum Rice

Ingredients:

- 2 cups of white rice

- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red capsicum, diced
- 2 tomatoes, diced
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 cups of water

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and sauté until the onion is translucent.

3. Add the capsicum, tomatoes, salt, and pepper and cook for a few minutes.

4. Add the rice and stir to combine.

5. Add the water and bring to a boil.

6. Reduce the heat to low and cover the pot.

7. Simmer for 20 minutes or until the rice is cooked through.

8. Serve hot. Enjoy!
