Tomato and Cheese Egg Fried Rice
Ingredients:
- 2 eggs
- 1/2 cup shredded cheese
- 1/4 cup diced onion
- 1/4 teaspoon ground black pepper
- 1 clove garlic, minced
- 1/2 cup diced tomatoes
- 1/2 teaspoon salt
- 2 cups cooked rice
- 1/2 cup cooked pasta
Instructions:
1. Heat a large skillet over medium-high heat.
2. Add the eggs to the skillet and scramble until cooked through.
3. Add the onion, pepper, garlic, and tomatoes to the skillet and cook for 2-3 minutes.
4. Add the cooked rice and pasta to the skillet and stir to combine.
5. Add the shredded cheese and stir until melted.
6. Taste and adjust seasoning with salt and pepper if desired.
7. Serve hot. Enjoy!
