Tomato and Cheese Pasta
Ingredients:
-1/2 pound of pasta
-1/4 cup of olive oil
-1/2 cup of grated Parmesan cheese
-1/2 cup of diced tomatoes
-1 egg
-Salt and pepper to taste
Instructions:
1. Bring a large pot of salted water to a boil.
2. Add the pasta to the boiling water and cook until al dente, about 8-10 minutes.
3. Drain the pasta and set aside.
4. In a large skillet, heat the olive oil over medium heat.
5. Add the diced tomatoes and cook for 2-3 minutes.
6. Crack the egg into the skillet and scramble until cooked through.
7. Add the cooked pasta to the skillet and toss to combine.
8. Add the Parmesan cheese and season with salt and pepper to taste.
9. Serve the pasta warm. Enjoy!
