Recipe: Tomato and Cheese Stuffed Arepas

Ingredients:
- 2 cups harina (cornmeal)
- 1 egg
- 1 tomato, diced
- 1/2 cup queso fresco (fresh cheese), crumbled
- 2 tablespoons cebollin (chives), chopped
- 2 tablespoons aceite (oil)
- 1/2 pound carne (meat of your choice), cooked and shredded
- Salt and pepper to taste

Instructions:
1. In a mixing bowl, combine the harina, egg, and a pinch of salt. Gradually add water and mix until a dough forms.
2. Divide the dough into small balls and flatten them to form thick discs.
3. In a skillet, heat the oil over medium heat. Cook the arepas for about 5 minutes on each side, or until golden brown and cooked through.
4. In a separate bowl, mix the cooked meat, diced tomato, crumbled cheese, and chopped chives. Season with salt and pepper.
5. Slice the cooked arepas in half and stuff them with the meat and cheese mixture.
6. Serve the stuffed arepas warm and enjoy!
