Tomato and Chicken Frittata
Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 cups diced tomatoes
- 1 cup cooked, shredded chicken
- 6 large eggs
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper, to taste
Instructions:
1. Preheat oven to 350°F (175°C).
2. Heat olive oil in a large oven-safe skillet over medium heat. Add garlic and cook, stirring, until fragrant, about 1 minute.
3. Add tomatoes and chicken and cook, stirring occasionally, until tomatoes are softened, about 5 minutes.
4. In a large bowl, whisk together eggs, parsley, salt, and pepper.
5. Pour egg mixture over tomato and chicken in skillet. Cook, stirring occasionally, until eggs are just beginning to set, about 5 minutes.
6. Transfer skillet to preheated oven and bake until eggs are completely set, about 15 minutes.
7. Serve warm. Enjoy!
