Tomato and Cucumber Quinoa Salad
Ingredients:
- 2 cups cooked quinoa
- 2 large tomatoes, diced
- 1 large cucumber, diced
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked quinoa, diced tomatoes, and diced cucumber.
2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
3. Pour the dressing over the quinoa mixture and stir to combine.
4. Serve chilled or at room temperature. Enjoy!
