Tomato and Egg Stir Fry
Ingredients:
- 2 eggs
- 2 tablespoons of oil
- 1 tomato, diced
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Crack the eggs into the skillet and scramble until cooked through.
3. Add the diced tomato to the skillet and stir to combine.
4. Cook for an additional 2-3 minutes, stirring occasionally, until the tomato is softened.
