Tomato and Egg Stir Fry

Ingredients:

- 2 large tomatoes, diced
- 2 large eggs
- 2 tablespoons vegetable oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper

Instructions:

1. Heat the oil in a wok or large skillet over medium-high heat.

2. Add the diced tomatoes and stir-fry for 1 minute.

3. Crack the eggs into the pan and stir-fry for another minute.

4. Add the salt and pepper and stir-fry for another minute.

5. Serve hot.
