Tomato and Halloumi Penne

Ingredients:

- 2 large tomatoes, diced
- 1 cucumber, diced
- 200g halloumi, cubed
- 500ml tomato passata
- 2 tablespoons apple pulp
- 250g penne
- 2 tablespoons tomato pieces
- 2 tablespoons polenta

Instructions:

1. Preheat the oven to 180°C.

2. In a large bowl, combine the diced tomatoes, cucumber, halloumi, tomato passata, apple pulp, and tomato pieces. Mix until all ingredients are evenly distributed.

3. Spread the mixture onto a baking tray and sprinkle the polenta over the top.

4. Bake in the oven for 20 minutes, or until the halloumi is golden and the tomato passata is bubbling.

5. Meanwhile, cook the penne according to the packet instructions.

6. Once cooked, drain the penne and add it to the baking tray. Mix until all ingredients are evenly distributed.

7. Serve the tomato and halloumi penne hot. Enjoy!
