Tomato and Halloumi Penne

Ingredients:

- 2 large tomatoes, diced
- 1 cucumber, diced
- 200g halloumi, cut into cubes
- 500ml tomato passata
- 2 tablespoons apple pulp
- 250g penne
- 2 tablespoons tomato pieces
- 2 tablespoons polenta

Instructions:

1. Preheat the oven to 200°C.

2. Place the diced tomatoes and cucumber in a large baking dish.

3. Add the halloumi cubes and tomato passata. Mix together until all the ingredients are evenly combined.

4. Place the apple pulp, penne, tomato pieces and polenta in the baking dish. Mix together until all the ingredients are evenly combined.

5. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.

6. Remove the foil and bake for a further 10 minutes until the pasta is cooked through.

7. Serve the Tomato and Halloumi Penne warm. Enjoy!
