Recipe Name: Tomato and Onion Fried Rice

Ingredients:
- 2 eggs
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cups cooked rice
- Salt and pepper to taste
- Soy sauce (optional)
- Vegetable oil

Instructions:
1. Heat some vegetable oil in a large pan or wok over medium heat.
2. Crack the eggs into the pan and scramble them until cooked through. Remove from the pan and set aside.
3. In the same pan, add a little more oil if needed and sauté the chopped onion until translucent.
4. Add the diced tomatoes to the pan and cook until they start to soften.
5. Stir in the cooked rice, breaking up any clumps and mixing well with the vegetables.
6. Season with salt and pepper to taste. You can also add a splash of soy sauce for extra flavor if desired.
7. Return the scrambled eggs to the pan and mix everything together until heated through.
8. Serve the tomato and onion fried rice hot and enjoy!
