Ingredients:
- 2 large eggs
- 1 small onion, finely chopped
- 1 medium tomato, diced
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon vegetable oil

Step-by-Step Guide:

1. Crack the eggs into a bowl and whisk them until well beaten. Season with salt and black pepper according to your taste. Set aside.

2. Heat the vegetable oil in a non-stick frying pan over medium heat.

3. Add the chopped onion to the pan and sauté until it becomes translucent and slightly golden, about 2-3 minutes.

4. Add the diced tomatoes to the pan and cook for another 2 minutes, stirring occasionally. The tomatoes should soften slightly but still retain their shape.

5. Pour the beaten eggs over the cooked onions and tomatoes in the pan. Allow the mixture to spread evenly across the pan.

6. Cook the omelette for about 2-3 minutes, or until the edges start to set and the bottom is lightly golden.

7. Gently lift the edges of the omelette with a spatula and tilt the pan to allow the uncooked egg mixture to flow to the edges.

8. Once the omelette is mostly set but still slightly runny on top, carefully flip it over using a spatula or by sliding it onto a plate and then flipping it back into the pan.

9. Cook for another 1-2 minutes until the omelette is fully set and lightly browned on both sides.
